Most people choose wine the hard way. They try to remember a grape name they liked once, scan a shelf for it, and hope.
Start at the other end
Decide what is on the plate first. A slow braise and a grilled fish want different wines even if you love the same grape. Once the food is fixed, the list of sensible bottles gets short very quickly.
What actually matters
- Acidity. It is what cuts through fat and salt. A wine that tastes sharp on its own often comes alive next to food.
- Weight. Match the body of the wine to the richness of the dish.
- Budget. Say it out loud. Nobody good will think less of you for it.
